In order to feel better about ourselves after eating our body weight in ice cream last week, we decided to whip up something healthy that would make our mommas proud.

And how do you make your mommas proud and still be cool enough to hang with the bbq squad?

That’s right, by lighting up the charcoal and throwing a full color spectrum worth of veggies on the grill!

Instead of just ripping open a bag of salad and smothering it in ranch, impress your guests with your well-rounded culinary skills by serving up this salad to kick off the meal.

The variety of veggies combined with the mustard/balsamic marinade brings a unique flavor with every bite. It’s a simple recipe, taking around 45 minutes depending on the size of your grill, that can be a perfect addition to your meat-heavy grilling repertoire.

It can also be an entire meal in itself!
